Did I add that I put a smidge of nutmeg in and that tasted really great. Hadnt thought of nuts on top, but yeah. or croutons.

I made another soup where I sauteed zukes and onions and mushrooms with butter and oil, then simmered them in stock. When I blended it, I added half an avocado. I actually tried it both ways, with avocado and without, because I was sceptical of the recipe that encouraged it :) and the avocado way was much better. it added a faint sweetness and creaminess that I really missed in the sans avocado version. maybe the mushrooms added a little bitterness? anyway, very creamy and good, and  again, no dairy if you dont use butter. you could use coconut oil or olive oil... :)
