A couple of weeks ago I had a bowl of soup at a restaurant that really blew me away. It was a creamy zucchini and swiss chard. My most recent CSA box had some of beautiful zukes and chards, so I attempted the soup.
I shredded the zucchini and de-stemmed the chard. Sauteed them together with some olive oil and then added chicken stock and simmered until everything looked very tender, about twenty minutes. Cooled it for a bit, then put it in the blender. Added salt, pepper and a smidge of nutmeg. It was really, really delicious. Mine was thicker than the restaurants, I could have thinned it out, but I liked it. It would even make a very interesting sauce for a pizza or even on noodles.

Oh! This sounds heavenly. And I have both zucchini and swiss chard in the garden…. as well as hens for stock in the deep freeze. Mmm. Will try it most certainly. I like, too, that there’s no dairy. I’m thinking something nutty on top?

Did I add that I put a smidge of nutmeg in and that tasted really great. Hadnt thought of nuts on top, but yeah. or croutons.
I made another soup where I sauteed zukes and onions and mushrooms with butter and oil, then simmered them in stock. When I blended it, I added half an avocado. I actually tried it both ways, with avocado and without, because I was sceptical of the recipe that encouraged it
and the avocado way was much better. it added a faint sweetness and creaminess that I really missed in the sans avocado version. maybe the mushrooms added a little bitterness? anyway, very creamy and good, and again, no dairy if you dont use butter. you could use coconut oil or olive oil…

Oh, yes, I’m reading you with interest!! (Where did we first become aware of one another? The CC list serv five or so years ago?) Yes, the avocado…. Mmm. Trying to make more healthful choices and lean out — I’m not eschewing dairy entirely, but cutting back, and pretty much breaking up with cheese. I’m happy to see this blog back in business — I check on on your other, too! Peace out, sister.
